Rachael spends most of her time chasing organoleptic properties and fulfilling her mission in the preservation of artisan cheesemaking.  She accomplishes this through education, palate titillation, sensory stimulation, and good, old-fashioned cheesemongering.  She is a cheese and wine writer, educator, and aroma enthusiast. Nowadays, you can find her mongering and educating at The Curd Nerd in Syracuse, New York, which is a cut-to-order cheese shop with an exceptional, rotating selection of artisan fromage.

Leslie Cooperband has spent most of her adult life at the intersection of nature and agriculture. Before becoming a dairy farmer and cheese maker in central Illinois, she was a professor of soil science in Wisconsin. She, along with her husband, Wes Jarrell, founded Prairie Fruits Farm & Creamery (PFFC) in 2004, Illinois first farmstead creamery.  After 20 years of milking pastured goats and making award-winning cheese, they sold the farm to local food & hospitality business owners.  Leslie and Wes now own a 46-acre farm neighboring PFFC. They are engaged in native ecosystem restoration, including prairie, wetland and woodland.  She writes a Substack page called “Leslie’s Farming with Nature,” is a 2026 Rural Regeneration Storyteller and is writing a memoir on becoming a dairy farmer and a cheesemaker.
