Pair your spread with ice-cold, bourbon-forward Mint Juleps, the quintessential cocktail of the Derby and the season. Select cheeses that both complement and contrast the rich, caramel, vanilla, and oak notes of Kentucky bourbon, and elevate the presentation with fresh, seasonal garnishes. Think fragrant mint, ripe berries, and delicate florals to reflect the beauty and renewal of spring in the South.
Aim for a balance in the cheese selection with a variety of textures, colors, and flavor profiles. For instance, a fresh tangy goat cheese softly brightens the springtime board and cleanses the palate. Cypress Grove’s Meyer Lemon and Honey is refreshingly creamy with subtle honey notes that complement bourbon’s sweetness. A young smoked cheese will amplify bourbon’s smoky notes. Marieke’s Young Smoked Gouda is aged for 2 to 4 months, producing a young, semi-soft Gouda. It has a smooth and buttery texture balanced with savory smoke.

Kenny’s Farmhouse Jalapeno Jack
For contrast and playful pops of flavor, add a peppery jack cheese or fortified cheese. Kenny’s Jalapeno Jack is produced in Kentucky by Kenny’s Farmhouse cheese. It’s a classic American-style Monterey Jack with a kick of jalapeño peppers. A hoppy Beer Cheddar from California’s Fiscalini Farmstead is infused with Imperial Stout Ale Beer, which adds malty richness to their handcrafted cheddar cheese.
And be sure to include a sharp, crystalline aged cheddar or Gouda, which pairs beautifully with bourbon’s sweet vanilla and caramel notes. Wisconsin Aging and Grading produces 724 Reserve aged cheddar which is a 15-year cheddar, with an intensely sharp, complex flavor and a firm, crumbly texture studded with crunchy calcium crystals. A firm Beemester Gouda delivers pronounced butterscotch notes, nutty depth, and delicate crystalline crunch.

Mint Julep
The mint julep is a classic Southern American cocktail, and the signature drink of the Kentucky Derby. It consists of bourbon, simple syrup, fresh mint, and plenty of crushed ice. Traditionally, it is served in a silver or pewter cup.
Ingredients:
2 oz. bourbon, such as Woodford Reserve®
1/2 oz. simple syrup
3 fresh mint leaves
Crushed ice
Preparation:
Express the essential oils in the mint and rub them inside the glass. To the same glass, add simple syrup, bourbon, and crushed ice. Stir. Garnish with more ice and fresh mint.
For a mocktail version, use 1/2 oz. mint simple syrup and top with unsweetened tea.
